Actually, May is traditionally not an oyster-eating month but aquaculture oysters are a whole different thing. Anderson’s Neck Oyster Company and other companies like them are farming triploid oysters that do not breed. Because they don’t put energy into reproduction, triploid oysters grow to harvest size much faster than regular oysters (diploid) and if they are farmed in clean water, you can eat them year round. It’s magical, really! Regular oysters can taste HORRIBLE in the summer because they shift into breeding mode in the warmer weather and start to not taste so good (as you can imagine).
